Rouille

Rouille is a type of sauce that consists of olive oil with bread or breadcrumbs with spices. Generally it is highly spiced with peppers and chile. The name come from the French word for rust. Rouilles can be used on many dishes, but it is most commonly served on fish. It is most often used in the cuisine of Provence.
