Iskender kebap

İskender kebap is one of the most famous meat foods of northwestern Turkey and takes its name from its inventor, İskender Efendi, who lived in Bursa in the late 19th century. It is a registered trade mark and in Bursa, it is prohibited to sell it under this name in a place other than the original İskender Restaurant.

It is a kind of döner kebap prepared from thinly cut grilled lamb basted with tomato sauce over pieces of pita bread and generously slathered with melted butter and yoghurt. Specially consumed with "Shira" as a drink helping digestion.
